Recipe Ingredients for vegetable pie

1/2 onion
3 tbsp olive oil
1/2 yellow bell pepper
1/2 red bell pepper
1 small zucchini
10 cherry tomatoes
1/4 cup chicken broth
2/3 cup part-skim ricotta
4 tbsp parmesan cheese
1 egg yolk
8 oz frozen puff pastry

Recipe Directions for vegetable pie

  1. Oven - 375.

  2. Saute onion in oil 3-4 min. Add peppers, zucchini, and eggplants and saute over low heat - 5 min. Add tomatoes and season with salt. Cover and simmer over very low heat - 15 min.

  3. Roll pastry out. Line base and sides of prepped pan with pastry. Prick all over with a fork. COver with weights or dried beans. Bake until lightly browned - 15-18 min.

  4. Mix veg, ricotta, parmesan, and egg yolk. Fill pastry case with veg.

  5. Bake 20-25 min.
