Delicious with lots of veggies. Look for buckwheat noodles in the asian section otherwise whole wheat will work

Recipe Ingredients for Vegetable Pho Soup

13 oz Whole Wheat Spaghetti
12 cups vegetable broth
5 cups escarole
3 cups stir fry veggie
2 cup mung bean sprouts
4 cloves garlic
1/3 cup lemon juice (1 lemon)

Recipe Directions for Vegetable Pho Soup

  1. Saute garlice add broth and heat. Add chopped escarole and cook for 10 minutes. Add stir fry veggies. Add lemon juice.

  2. Cook pasta and keep in tepid water. When ready to serve put single servings of pasta in bowl with vegetabl and broth. Serve with mung bean sprouts, tamari and hot chili sauce.
