Vegetable Patties Recipe

Still experimenting, subject to change. The ones I have made are a little soft, but still good served on a sandwich or as a main dish with salsa.

Recipe Ingredients for Vegetable Patties

1 bell pepper
1 cup lentils, dry
1/4 cup brown rice, dry
1/2 tsp margarine
1 tbsp garlic, minced
1/2 cup onion
1/4 cup cornmeal
1/4 tsp garlic salt

Recipe Directions for Vegetable Patties

  1. Cook lentils and rice together until very soft.

  2. Preheat oven to 350. Sautee garlic and onion in margarine until onion is translucent. Add, including the oil, to lentils and rice and mash together.

  3. Cut bell pepper horizontally and remove innards so that you have 6 rings. Mince any remaining pepper and add to lentil mixture.

  4. Add salt and cornmeal to lentil mixture and press into the bell pepper rings. Bake on a lightly greased cookie sheet for 15 minutes. Turn patties over and bake for an additional 15 minutes or until patties are firm.
