Pasta with vegetable ratatouille and sprinkled with cheese

Recipe Ingredients for Vegetable Pasta

2 courgettes, chopped
3 carrots, chopped
1 onion, chopped
10 mushrooms, sliced
2 (tins) tomatoes
200 g pasta
50 g cheese, grated

Recipe Directions for Vegetable Pasta

  1. Fry the onions, mushrooms, carrots & courgettes in a wok with the garlic puree and a little olive oil

  2. Add tomotoes (mash them in a bowl before adding)

  3. Cook for about 10 minutes, and cook the pasta whilst waiting

  4. Drain pasta, add some of the vegetable mix and sprinkle with a little cheese

  5. Serve
