Yummy pasta bake with vegetables and cheese

Recipe Ingredients for Vegetable Pasta Bake

4 medium Carrots
2 medium Squash, Summer, Zucchini, Includes Skin
2 cup, cubes Squash, Winter, Butternut
2 medium (2-1/2" dia) Onions
400 grams Tomatoes
2 medium Red Bell Pepper
1 Serving Penne
2.5 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Vegetable Pasta Bake

  1. Roast vegetable.

  2. Fry onion and add tomatoes

  3. Mix all together in baking dish

  4. Top with sliced mozzarella

  5. Bake at 180 for 30 minutes
