Great recipe for the summer when garden vegetables are bountiful. Any combination of vegetables will work. Yummy as a side dish, or a filling for a pita or wrap.

Recipe Ingredients for Vegetable Paprikish

2 cups cabbage, sliced
1 cup zucchini, sliced
1 cup summer squash, sliced
1 cup onion, sliced
1 cup green peppers, sliced
2 cup red peppers, sliced
1 1/2 cup mushrooms, sliced
1 cup carrots, sliced
1 cup celery, sliced
3 tbsp paprika
3 tbsp flour
3/4 cup beef broth
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Vegetable Paprikish

  1. Stir fry all vegetables until tender. I use PAM and a little bit of water to to cook them. Can use olive oil too.

  2. Combine flour and paprika. Stir into vegetable mixture. Cook for 1-2 minutes.

  3. Add beef broth. Cook until thick.

  4. Serve.
