Recipe Ingredients for Vegetable Pancakes

3/4 cups sweet potato
3/4 cups zucchini
2 green onions
1/2 cup grated parmesan cheese
3/4 cups plain flour
3/4 cup self raising flour
3 eggs

Recipe Directions for Vegetable Pancakes

  1. Combine all ingredients in a bowl and mix well until combined. Season to taste.

  2. Spray a non stick fry pan with olive oil and place over a moderate heat. Cook mix in 1/2 cup portions for 2-3 mins or until golden brown.
