Shredded vegetables pancakes can be made with any mixture of root vegetables.

Recipe Ingredients for Vegetable pancakes

3 carrot
1 egg
1/4 tsp salt
1/4 tsp thyme
1 tbsp olive oil

Recipe Directions for Vegetable pancakes

  1. Peel and shred carrots.

  2. Toss carrots with 1 beaten egg and seasonings.

  3. Heat oil in a non-stick pan. Spoon 1/4 to 1/6 of mixtue into pan, flatten slightly, and saute over medium heat about 6 minutes, turning once.

  4. Serve with grilled meats or fish.
