Recipe Ingredients for Vegetable Paella - Slimming World

1 large Onions

1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia)(164 g) Peppers, Sweet, Red
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia)(164 g) Peppers, Sweet, Red
1 carrot Carrots
1 carrot Carrots
1 large whole (3" dia) Tomatoes, Red, Ripe
1 large whole (3" dia) Tomatoes, Red, Ripe
1 tbsp Paprika
5 serving Vegetable Stock
100 grams Peas, Green
1 fruit without seeds Lemons
3 serving paella rice (100g)

Recipe Directions for Vegetable Paella - Slimming World

  1. 1. Fry finely chopped onions for 5 mins.

  2. 2. Add Garlic, Peppers, Carrots, and Tomatoes (all chopped), for a further 5mins.

  3. 3. Stir in rice, add a bay leaf, paprika, a pinch of saffron threads, and stock. Turn the heat down very low and cook for a further 15mins or until the rice is tender and the liquid absorbed.

  4. 4. Add the peas and cook for a further 5mins.

  5. 5. remove from the heat and leave to stand for 10mins, covered. remove bay leaf and garnish with parsley and server with a wedge of lemon for squeezing over.
