Recipe Ingredients for vegetable packed soup

32 oz Vegetable Broth
5 cup, chopped Kale
8 oz Firm Tofu
2 large Squash, Summer, Zucchini, Includes Skin
4 stalk, large (11"-12" long) Celery
2 large whole (3" dia) Tomatoes, Red, Ripe
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Green
2 pepper Peppers, Jalapeno
2 carrot (7-1/2") Carrots
1 medium (2-1/2" dia) Onions
10 clove Garlic
1 tbsp Olive Oil

Recipe Directions for vegetable packed soup

rub tomato, peppers, squash, carrots and garlic cloves with 1 tsp olive oil by hand. Roast in a 375 oven for 30-45 mins. Place tomatoes and peppers in a closed container or plastic bag and let steam for about 30 minutes. Meanwhile, chop onion and celery and kale into spoonable sizes. Saute onion in 2 tsp of olive oil in a big soup pot. Add bay leaf, rosemary, thyme, salt pepper or any other seasoning you prefer and simmer until fragrant. Add diced veggies and saute on low to med heat. When veggies are softened add broth Peel skins off roasted veggies when cool enough to handle. Smash garlic and add to the pot. Chop remaining veggies in spoonable sizes and add to the pot. I like to add the tomatoes last and keep the juice on the cutting board, pouring it into the soup. Chop tofu into cubes and add to the soup. Cook all together for 30-60 mins until kale and carrots are tender. Top with a big handful of chopped parsley if you like. Enjoy a great big bowl!
