Recipe Ingredients for Vegetable Orzo

2 oz barilla orzo, dry
1 cup zucchini, chopped
1/2 cup mushrooms, chopped
1/4 cup chopped red pepper
1/4 cup chopped onion
1 cup chicken stock

Recipe Directions for Vegetable Orzo

  1. Saute vegetables with some salt and pepper. Add basil, oregano, and cumin to taste.

  2. If adding shrimp or chicken, once veggies are about half-cooked, add shrimp/chicken and continue to saute about two more minutes then add dry orzo and saute one more minute.

  3. Add chicken stock and turn heat down to medium low and simmer until all stock is absorbed and orzo is cooked through.
