Low-fat omlette made with egg whites.

Recipe Ingredients for Vegetable Omlette

3 large Egg, White
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
0.5 large raw Zucchini
1 small whole (2-2/5" dia) Tomatoes, Red, Ripe

Recipe Directions for Vegetable Omlette

  1. Preheat an oven to high heat

  2. Chop all ingredients.

  3. Heat a pan with low-fat cooking spray.

  4. Lightly fry the vegetables and then set aside.

  5. Beat your egg whites with a little bit of non-fat milk. Add any herbs you would like. I like to add chives.

  6. Pour the egg mixture into the pan and heat on a low heat for ten minutes.

  7. When the egg is almost cooked add the vegetables.

  8. Place the pan into the oven and brown the top of the omlette.

  9. Serve hot with a chilli relish.
