Recipe Ingredients for Vegetable Omelette

4 eggs
1/4 cup green pepper
1/4 cup onion
1/4 cup mushrooms
2 tbsp extra virgin olive oil

Recipe Directions for Vegetable Omelette

  1. Stir fry onions for 2 minutes on medium heat until slightly browned, then add green peppers and mushrooms. Let veggies cook for another 2-3 minutes until softened.

  2. In a separate bowl, mix 4 eggs, and season with salt and pepper, 1/2 tsp of garlic powder, and tsp of oregano.

  3. Once veggies are cooked, spread evenly in pan, and add eggs on top. Reduce heat and cover pan. Cook until top of omelette is done.
