Recipe Ingredients for Vegetable Omelet with Smoked Gouda

2 tbsp margarine
1 small yellow onion
1/2 large red or green bell pepper
4 large eggs
2 tbsp skim milk
3/4 tsp salt
1/8 tsp black pepper, freshly ground
2 oz Gouda or Swiss cheese, preferably smoked
1 tbsp Dijon mustard (optional)

Recipe Directions for Vegetable Omelet with Smoked Gouda

  1. Melt 1 tbsp of the margarine in a 10" skillet with sloped sides over medium heat. Coarsely chop onion and place in skillet. Coarsely chop bell pepper and add skillet. Cook for 4-5 minutes or until vegetables are crisp-tender, stirring occasionally.

  2. While vegetables are cooking, beat eggs with milk, 1/2 tsp of the salt, and pepper. Shred cheese and set aside. Sprinkle remaining 1/4 tsp of the salt over the vegetables, transfer to bowl, and set aside

  3. Melt remaining 1 tbsp margarine in the same skillet over medium-high heat. Swirl margarine around edges of skillet to prevent omelet from sticking. When butter is bubbly, add egg mixture. Cook for 2 minutes or until eggs begin to set on bottom. Gently lift lift edges of omelet with a spatula to allow uncooked portion of eggs to flow to edges and set. Continue cooking for 2-3 minutes or until center is almost set. Sprinkle cheese over eggs and spoon vegetables down center

  4. Using a large spatula, fold one edge over the filling and slide onto a warm serving platter. Serve with mustard, if desired.

  5. Serving Suggestions: Serve with pumpernickel or rye toast
