1 egg, large
1 tablespoon milk
1/2 cup zucchini, carrot, celery, yellow squash, chopped
1 dash pepper
1 oz cheese, pepperjack

Recipe Directions for Vegetable omelet

  1. Mix together milk and egg.

  2. Pour into heated skillet.

  3. Combine vegetables and pepper. Pour into egg.

  4. Top with cheese.

  5. Fold over egg to form omelet.

  6. Cook to desired consistency.
