Primarily egg white & veggie omelet from Biggest Loser 30 day jump start program

Recipe Ingredients for Vegetable Omelet

4 tbsp broccoli, chopped
2 tbsp carrots, chopped
2 tbsp onions, yellow, chopped
4 egg whites
1 egg, whole
1/2 tsp garlic seasoning,Mrs. Dash
3/4 oz cheese,1 wedge Laughing Cow light
2 tbsp refried beans, fat-free

Recipe Directions for Vegetable Omelet

Cook first 3 ingredients in pan sprayed w/olive oil cooking spray for 2 minutes, while they're cooking, whisk eggs till light & frothy add Mrs. Dash seasoning to eggs and pour over veggies. Cover and cook for 2 minutes or till mostly set. Crumble cheese over top and add beans. Fold in 1/2 and cook on low x 2 more minutes.
