Recipe Ingredients for Vegetable Noodle Soup

1 oz Extra Virgin Olive Oil
2 medium Onions
3 carrot Carrots
2 stalks Celery
48 oz Chicken Broth
15 oz Tomatoes Diced Cut Peeled
1 tbsp Tomato Paste
8 oz Potatoes, cut into 1/2 inch dice
8 oz Vegetables, Mixed
1 cup Noodles, Egg
1 dash Salt, Table
2 3/10 oz Parsley

Recipe Directions for Vegetable Noodle Soup

  1. In a large saucepan, heat the oil over moderately low heat. Add the onions, carrots, and celery and cook, stirring occasionally, until the vegetables start to soften, about 10 minutes.

  2. Stir in the broth, tomatoes, tomato paste, potatoes, mixed vegetables, and 1.25 tsp salt. (Omit salt for sodium-conscious diets, hence the "dash".) Bring to boil. Reduce heat and simmer, partially covered, until the vegetables are almost tender, about 20 minutes.

  3. Stir in the egg noodles. Bring the soup back to a simmer and cook until the vegetables and noodles are tender, about 5 minutes. Stir in parsley.
