Nice, hearty vegetarian soup. Simple to make.

Recipe Ingredients for Vegetable Noodle Soup

1 cup onions, chopped
3 cloves garlic, minced
1 tbsp olive oil
1 cup carrots, sliced
1 cup potatoes, cubed
1 cup tomatoes, chopped
1/2 cup tomato sauce
6 cups water
1/2 tsp marjoram
1/2 tsp oregano
2 tbsp fresh parsley, chopped
1 cup dry egg noodles, medium
15 oz white kidney beans, drained and rinsed
1 cup red bell pepper, chopped

Recipe Directions for Vegetable Noodle Soup

  1. Saute the onions and garlic in the oil.

  2. Add the tomatoes when the onion is translucent. Cook, stirring, until the tomatoes are soft.

  3. Add the tomato sauce, water, and herbs and bring to a boil. Add the carrots and potatoes. Simmer for 5 minutes.

  4. Add the noodles and cook for another 8 to 10 minutes. Add the beans, bell pepper, and salt and pepper to taste. Heat through.
