Yummy, very filling chili for those who don't like their chili spicy

Recipe Ingredients for Vegetable, Non-Spicy Chili

1 tbsp olive oil
1/2 cup chopped onion
1 cup black beans, drained
1 cup pinto beans, drained
1 cup kidney beans, drained
1 1/2 cups diced tomatoes, drained
1 cup chopped zucchini
3/4 cup vegetable broth
3/4 cup barley
2 cups shredded cheddar cheese

Recipe Directions for Vegetable, Non-Spicy Chili

  1. Heat the oil in a deep skillet. Add onion and saute, about 5 minutes. Add beans, tomatoes, zucchini, broth and barley. Add salt and pepper to taste. Mix well and reduce heat to summer. Cover and simmer for 20 minutes, stirring occasionally.

  2. Heat broiler. Place chili in deep-dish broiler-safe casserole, top with cheese and place under broiler until cheesy goes past melty to crispy.
