Recipe Ingredients for Vegetable and mushroom Casserole/Stew

8 oz navy beans
4 oz carrots, sliced
4 oz parsnip, sliced
4 oz swede, cubed
3 oz celery, sliced
4 oz savoy cabbage, sliced
4 oz leeks, sliced
4 oz potatoes, cubed
3 oz red pepper, sliced
2 medium onion, diced
2 garlic cloves, chopped finely
400 grams canned tomatoes, chopped with juice
1 tablespoon tomato puree
1 oz sun dried tomatoes
4 oz mushrooms, sliced
2 1/2 pints stock, vegetable
1/2 tablespoon dried mixed herbs
1 tablespoon worchestershire sauce
1 1/2 tablespoons olive oil
1 oz bay leaf
1 salt and pepper, season to taste

Recipe Directions for Vegetable and mushroom Casserole/Stew

Heat the oil in a large saucepan that has a lid and fry off onions until soft, then fry off the garlic and mushrooms until soft, add a little stock to prevent sticking, and add all the vegetables, except the tomatoes, sun dried tomatoes, tomato paste, potatoes and cabbage and saute on a low heat with lid on for about 5 - 10 minutes. Now add the worchester sauce, stock, tomatoes, tomato puree, herbs, cabbage, potatoes, bay leaves, beans and bring up to the temperature and then add the salt and pepper to tatse, then simmer until veggies are cooked and sauce has thickened add more veggie stock if casserole becomes to thick or dry or with not enough juice and serve piping hot with a crusty roll or herb dumpling which you can either cook seperately or place on top of stew for the last 20 minutes of cooking.
