Can use 110g mushrooms sliced instead of courgettes

Recipe Ingredients for Vegetable Moussaka

50 g lentils
570 ml water
2 tablespoons olive oil
160 g onion, finely chopped
1 clove garlic, chopped
135 g courgettes, sliced
50 g tomato paste
2 teaspoons dried oregano
1/2 teaspoon ground nutmeg
1 salt and pepper
350 g aubergines, sliced
390 g potatoes, sliced (2 large)
210 g tomatoes, sliced
50 g butter
2 1/2 tablespoon flour
500 ml skim milk
1 egg
1 teaspoon mustard powder
75 g grated cheddar

Recipe Directions for Vegetable Moussaka

  1. Preheat oven to gas mark 180c

  2. Boil lentils and simmer for 45 mins

  3. Drain and reserve liquid

  4. Heat 1 tblsp oil and saute onion garlic and courgettes

  5. Add lentils and cook a few mins

  6. Remove from pan with slotted spoon

  7. Put veg in a bowl and mix in a little juice from lentils, tomato past and oregano. Season with S&P & nutmeg

  8. Place aubergine slices in greased oven dish and drizzle with olive oil or spray and bake 180c until soft.

  9. In dish put a layer of lentil mix, then aubergine then potato, then tomato.

  10. Make white sauce, melt butter and stir in flour. Cook roux for 2-3 mins. Add milk bit by bit stirring constantly until all liquid is in and sauce is smooth and then simmer 5 mins. Cool slightly and then beat in egg, add mustard.

  11. Put sauce on top of mixture and sprinkle with cheese

  12. Bake for 40 mins until golden
