Recipe Ingredients for Vegetable Moo Shu, Inspired by Cooking Light's Vegetable Moo Shu!

1/2 ounce dried mushrooms (wood ear)
2 cups boiling water
1 teaspoon dark sesame oil
1 tablespoon chicken stock, low-sodium, fat-free
3/4 cup egg whites, lightly beaten
1 tablespoon ginger, minced (fresh, peeled)
2 garlic cloves, minced
4 cups thinly sliced cabbage (green)
1 cup thinly sliced bell pepper (red)
1 cup green onions (diagonally sliced)
1 tablespoons rice vinegar
2 teaspoons cooking wine (dry sherry)
1 tablespoon low-sodium soy sauce
1 tablespoon hoisin sauce

Recipe Directions for Vegetable Moo Shu, Inspired by Cooking Light's Vegetable Moo Shu!

  1. Combine mushrooms and boiling water in a bowl.

  2. Cover and allow the mushrooms to rehydrate/plump/sit in the water for 30 minutes or until soft.

  3. Drain and slice mushrooms into thin strips.

  4. Heat sesame oil chicken stock in a large nonstick skillet or wok over medium-high heat.

  5. Add egg whites and stir-fry for 2 minutes.

  6. Remove the egg whites from the pan and set them aside.

  7. Add minced ginger and garlic to pan, and stir-fry 1 minute.

  8. Add mushrooms, cabbage, and bell pepper and stir-fry for 2 minutes.

  9. Add the onions and the next 4 ingredients (onions through hoisin sauce), and stir-fry for 1 minute.

  10. Add the egg-whites back into the pan.

  11. Garnish with fresh chives, if desired.
