Squash and sauteed vegetables baked together.

Recipe Ingredients for Vegetable Mish-Mash

3 cups butternut squash
3/4 cup onion, chopped
3/4 cup red bell pepper, chopped
10 mushrooms, quartered
1 tablespoon olive oil
3/4 cup cheddar cheese, shredded

Recipe Directions for Vegetable Mish-Mash

  1. Steam the squash -- I do it in the microwave.

  2. While it is cooking, saute the onion, pepper and mushrooms in the olive oil.

  3. Add whatever spices you want, and/or some garlic.

  4. Combine squash, veggies and grated cheese.

  5. Smooth into an 8X8 pan and bake at 350 for 30 minutes.
