Recipe Ingredients for vegetable minstrone with potato and chicken

1 cup celery, chopped
1 cup carrots, chopped
1 medium onion, chopped
3 cloves of garlic, minced
1/2 cup red potatoes, cooked
1 cup brocolli
14 ounces corn kernels
28 ounces crushed tomatoes
2 cups chicken broth
2 tbsp olive oil
12 ounces chicken breast

Recipe Directions for vegetable minstrone with potato and chicken

  1. chop celery, carrots, onion and brocolli into bite size pieces.

  2. Heat 1 tbsp olive oil in a pot and add veggies. cook for about 6-7 minutes and add the garlic. cook for 2 minutes and add a can of drained corn

  3. add 28-ounce can of crushed tomatoes and 1.5-2 cups of chicken broth

  4. cook chicken breast and potatoes in a seperate pan (cut in bite size pieces)

  5. add chicken and potatoes and let cook for about 10 more minutes.
