Recipe Ingredients for Vegetable Minestrone

1 onion, chopped
1 leek, sliced
1 celery stalk, sliced
2 carrots, diced
2 garlic cloves, crushed
1 pint chicken stock
800 g chopped tomatoes
2 oz pasta
1 tsp (5ml) caster sugar
1 tbsp fresh basil, chopped
1 tbsp fresh parsley, chopped
1 pinch of saffron
1 salt and pepper to taste

Recipe Directions for Vegetable Minestrone

  1. Soak the pinch of saffron strands in 15ml/1 tbsp boiling water. Leave to stand for 10 minutes

  2. Meanwhile, put the prepared onion, leek, celery, carrots and garlic into a large pan. Add the chicken stock, bring to the boil, cover and simmer for about 10 minutes.

  3. Add the canned tomatoes, the staffon with the liquid and the frozen peas. Bring back to the boil and add the soup pasta. Simmer for 10 minutes until tender.

  4. Season with sugar, salt and pepper to taste. Stir in chopped herbs just before serving.
