Recipe Ingredients for Vegetable Medley

2 cup zucchini
2 cup summer squash
1 cup mushrooms, diced
15 oz tomatoes, diced
2 cups peppers, green and yellow
1/4 cup shredded mozzarella cheese, low fat
2 tbsp parmesan cheese
1/8 tsp of pepper
1/8 tsp onion powder
1/8 tsp garlic powder
1 tbsp olive oil

Recipe Directions for Vegetable Medley

  1. pour olive oil into saute pan

  2. cup up mushrooms into large pieces

  3. slice 1 zucchini, 1 summer squash and 1 each green and yellow pepper.

  4. sautee vegetables in olive oil until tender but not mushy

  5. add 1 can diced tomatoes

  6. add seasoning

  7. remove from heat and add mozzarella cheese and/or parmesan cheese to taste
