Don't remember where I got this recipe from, but I sure like it. Freezes real well!

Recipe Ingredients for Vegetable Meat Loaf

645 gram ground chuck, 85% fat
545 gram ground Honeysuckle white turkey breast, 85% fat
240 gram white onion, chopped
4 cloves garlic, minced
1 tbs olive oil
1 package+10+oz+yields Green Giant 9-oz frozen chopped spinach
165 gram grated carrots
200 gram chopped celery
2 large eggs
100 gram quick-cooking oats
480 gram Garlic & Herb
2 teaspoons salt
2 teaspoons black pepper
4 teaspoons Italian seasoning

Recipe Directions for Vegetable Meat Loaf

  1. Heat a large frying pan with the olive oil.

  2. Add the garlic and onion and stir-fry until they are soft. Add the carrot and celery and cook until vegetables are soft. Remove from heat and cool.

  3. Meanwhile, put both meats into a very large bowl. Add the cooled vegetables along with the well-drained spinach, eggs, oatmeal and seasonings. Add 1 cup pasta sauce

  4. Mix well until all ingredients are combined. (I also added some red pepper flakes and Cajun seasoning as I like things with a little kick.)

  5. Preheat oven to 350F. Butter or spray desired amount of loaf pans. I used small individual loaf pans. You can also use muffin tins, for those of us who live the ?single? life.

  6. Portion out the meat mixture, slightly flattening top.

  7. Bake in the preheated oven for approximately 45 minutes, depending on what size you make this. Test for doneness to at least 150F. Remove from oven and spread the remaining pasta sauce over each serving.

  8. Return to oven and bake another 5-8 minutes or until sauce is set.

  9. Remove from oven. Serve with fresh vegetables and brown rice.

  10. Cool and then wrap tightly into plastic and freeze, dated and labeled.

  11. You can also portion out the mixture and use it to make some delicious meatballs.
