Marinara sauce made from fresh vegetables

Recipe Ingredients for Vegetable marinara sauce

3 tbsp catsup
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large tomato
4 cloves garlic
1/8 teaspoon parsley
1/8 teaspoon basil
1 small carrot
1 cup fresh mushroom
1 large eggplant
3 tablespoon chopped olives
2 tablespoon olive oil
1 tablespoon parmesan cheese
1/2 cup water

Recipe Directions for Vegetable marinara sauce

  1. Heat oil in skillet and saute garlic, onion and tomato

  2. Add carrots and 1.4 cup water

  3. Let simmer for a minute

  4. Add fresh mushroom, eggplant and olives

  5. Add water, catsup and let simmer until tomatoes are done

  6. Add salt, pepper and herbs to taste

  7. Add parmesan cheese just before serving
