Recipe Ingredients for Vegetable Marinara Sauce

2 tbsp olive oil
1 yellow squash
1 red bell pepper
1/2 white onion
2 cups sliced mushrooms
2 tsp garlic
2 tsp dried basil
1 tsp salt
1 tsp pepper
15 ounces tomato sauce
15 ounces diced tomatoes
6 ounces tomato paste

Recipe Directions for Vegetable Marinara Sauce

  1. heat olive oil over medium heat

  2. add onions, cook for 3 mins

  3. add peppers and diced squash, cook for 3 mins

  4. add garlic, cook for 2 mins

  5. add tomato paste, tomato sauce, and diced tomatoes

  6. combine well and allow to simmer for 10 mins

  7. add mushrooms, herbs, and spices

  8. simmer for at least 10 additional minutes
