Recipe Ingredients for vegetable loaf

15 g canola oil
432 g sweet potatoes
20 g garlic
200 g cherry tomatoes
182 g asparagus
132 g uncooked rice
50 g quinoa
7 1/2 g soy sauce
100 g tvp
417 g cooked spinach
20 g flax seed
2 oz cashews
1 tbsp salt
177 g corn flakes
208 g avocado
2 cups water

Recipe Directions for vegetable loaf

  1. put oil in large pan over medium high heat.

  2. chop garlic and sweet potatoes. let sweet potatoes cook in oil for 10-15 minutes stirring occationally. add in garlic, and let cook for an additional 5 minutes.

  3. chop tomatoes and asparagus into small pieces and add to cooking mixture on the stove. cook for additional 10 minutes

  4. add dry rice and dry quinoa, and flax seed and allow mixture to cook, stirring to prevent burning.

  5. in a bowl, soak tvp and add goya seasoning to water. set aside.

  6. add spinach to stove mixture. Now is the time to get a potato masher and incorporate the ingredients together into a cohesive mixture.

  7. take off heat and allow to cool for a few minutes until it can be handled. Add in mashed avocado, salt, creole seasoning, silken tofu and finely chopped cashews. Mash this mixture well before adding corn flakes in last. mix with hands until a mold-able consistency.

  8. form into 3-4 loaves and bake in over heated at 350 degrees for 4o minutes to an hour, on a dark oiled sheet pan.

  9. remove from heat and let rest until cool. Enjoy!
