Recipe Ingredients for vegetable, lentil and tofu curry

3 stalk Broccoli
1 large Onions
0.67 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
0.5 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
0.5 medium Orange Hothouse Bell Pepper
1 small Peppers, Sweet, Green
1 head raw Bok Choy
1 pepper Pepper, Serrano
3 carrot (7-1/2") Carrots
2 cup Peas
14 oz Lite
2 cup Certified Organic Vegetable Broth
5 clove Garlic
4 tbsp Olive Oil
1 cup dry Lentils
1 package Extra Firm
3 tbsp Curry Powder

Recipe Directions for vegetable, lentil and tofu curry

Roughly chop all vegetables, and mince garlic and serrano pepper. Sautee garlic and pepper in olive oil with onion and carrot. Pour in vegetable broth and coconut milk. Add in peppers and broccoli. Simmer covered 10 minutes. Add bok choy and peas. Simmer covered 10 more minutes. Remove lid and summer 10 more minutes.
