Vegan spinach, lentil, leek and potato soup, light and nutritious at once.

Recipe Ingredients for Vegetable and lentil soup

12 cups water
5 cups spinach
2 cups carrots
1/5 cup onions
1/2 cup leeks
2 potatoes
1 sweet potato
1 cup red lentils
1 tsp curry
1 tsp marjoram

Recipe Directions for Vegetable and lentil soup

Boil water, chop vegetables, add to water with spices and lentils as well as one bay leaf or two. Simmer 40 minutes and blend with immersible blender until smooth. Serve with fresh home-made bread.
