This soup is so good for you and tastes great too! It's loaded with veggies, and very filling.

Recipe Ingredients for Vegetable Lentil Soup

1 tbsp olive oil
1 onion, chopped
1 clove garlic, crushed
2 carrots, chopped
2 celery stalks, chopped
1 green pepper, chopped
1/4 tsp salt
1/4 tsp pepper
6 cups water
2 cup Vegetable Broth
1/2 cup Lentils

Recipe Directions for Vegetable Lentil Soup

  1. Heat oil in a dutch oven on medium heat.

  2. Add onion and garlic and saute for 3 minutes until soft.

  3. Add carrots, celery and green pepper; cook for another 3 minutes until soft.

  4. Add salt, pepper, cook for 1 minute.

  5. Add water and turn heat to high, bring to boil.

  6. Add vegetable broth and stir.

  7. Add lentils. Reduce heat to low and simmer covered for 30-45 minutes, until lentils are soft.
