Created using a medley of organic heirloom lentils. Try experimenting with different varieties of lentils, such as french green, or petite crimson, and black beluga for varying textures.

Recipe Ingredients for Vegetable Lentil Soup

2 1/4 cups lentils, rinsed and sorted
1/2 cup bell pepper
1/2 cup carrot
1/2 cup celery
1/2 cup onion
2 cloves garlic
1/2 green beans
2 quarts water
1 teaspoon sea salt
1 teaspoon cumin
1 teaspoon coriander
1/4 teaspoon cayenne

Recipe Directions for Vegetable Lentil Soup

  1. dice vegetables small

  2. add all ingredients to medium sized pot and bring to boil. lower to a simmer, skimming foam off top, about 45 minutes.

  3. ladle one cup servings in bowl and serve
