Vegetable Lentil Soup with Ham and Brown Rice

Recipe Ingredients for Vegetable Lentil Soup with Ham and Rice

1 small Onions
2 cup, diced Celery
2 cup, chopped Carrots
3 cloves Garlic
1 tbsp Olive Oil
8 cup (8 fl oz) Water
0.25 cup Parsley
2 tsp Sea Salt
16 oz Lentils
1 cup, diced Ham, Sliced, Extra Lean
2 cup Short Grain
1 tbsp Garlic Powder

Recipe Directions for Vegetable Lentil Soup with Ham and Rice

Saute chopped onions, celery, and carrots in olive olive oil till soft. Add chopped garlic, sea salt, and garlic powder; stir. Add 8 cups water or chicken broth; heat till almost boiling. Add rinsed lentils. Simmer for 30 minutes. Add chopped parsley, cooked brown rice, and ham. Simmer for 15 to 30 minutes or until lentils soft.
