Recipe Ingredients for Vegetable and Lemon Stirfry

4 cups broccoli, cut into bite size pieces
2 cups celery, sliced on the diagonal
1 cup carrots, sliced on the diagonal
1 cup zucchini, cut into chunks
1 c green peppers, cut into chunks
2 cloves garlic, minced
2 tsp oil, canola
1/2 cup chicken broth
1 tsp lemon rind
2 tsp lemon juice

Recipe Directions for Vegetable and Lemon Stirfry

  1. saute carrots and celery for 2 minutes in the oil

  2. Add garlic, and remaining vegetables and saute 2 minutes more.

  3. Add broth and rind, cover and steam 2 minutes (longer, if you like veggies softer)

  4. Sprinkle with lemon juice and serve.
