Recipe Ingredients for Vegetable lasagne

3 zucchini, washed and sliced
700 cup,+cubes butternut pumpkin
300 g sweet potato, peeled and sliced
1 cup grated Mozzarella
250 g Lasagne Sheets
4 tomatos
8 sliced mushrooms, cooked
100 g fresh spinach leaves, cooked
85 g Golden Nugget Squash
1 onion
5 tbsp Parmesan

Recipe Directions for Vegetable lasagne

  1. Bake the zucchini, pumpkin and sweet potato until tender.

  2. 2. Mix ricotta with egg and Perfect Italiano Mozzarella.

  3. 3. Layer lasagne sheets, vegetables, pasta sauce, spinach, mushrooms and cheese mixture.

  4. 4. Top with Parmesan and bake at 180C for 1 hour.

  5. Tip: Blend roasted vegetables and combine with pasta sauce first.
