Recipe Ingredients for Vegetable Lasagne

2 1/8 c. lasagne noodles, about 9
3 c. sweet peppers, variety of colors, sliced
2 onions, small
16 oz cottage cheese, low-fat
15 oz ricotta cheese, fat-free
1/2 c. cheddar cheese, shredded
4 oz. cheddar cheese, fat-free
1/4 c. cilantro, cut finely
15 oz. black beans
2 c. mushrooms, fresh and sliced
26 oz. spaghetti sauce
1 T vegetable oil

Recipe Directions for Vegetable Lasagne

  1. Saute peppers and onions in oil. Set aside. Add drained rinsed black beans.

  2. In food processor, blend cottage cheese, ricotta, shredded cheddars, and cilantro.

  3. Slice mushrooms.

  4. Non-stick spray a 9X13 baking dish. Layer 3 lasagne noodles with sauce, mushrooms, pepper mixture, and cheese. Top layer should just have sauce.

  5. Cover with foil and bake at 350 degrees for 45 minutes. Then uncover and bake another 20 minutes.
