Vegetable Lasagna Recipe

Healthy veggie lasagna with potatoes in place of traditional pasta noodles.

Recipe Ingredients for Vegetable Lasagna

22.787 oz Zucchini
1 medium unpeeled raw Eggplant
1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Russet, Flesh And Skin, Baked
20 oz Garden Vegetable Spaghetti Sauce
1 cup Parmesan, Grated Cheese
1.5 cup Fancy Mozzarella Shredded Cheese
1 cup Ricotta, Part Skim Milk Cheese

Recipe Directions for Vegetable Lasagna

  1. Slice eggplant (on diagonal) and zucchini (lengthwise) into 1/4" slices. Layer on dishtowels and salt generously. Cover with dishtowels and let rest for 30 minutes to absorb the moisture.

  2. Combine ricotta cheese, parmesan reggiano cheese, egg (beaten), 1 cup of mozzerella cheese with 1/4 cup of dried italian seasoning.

  3. Slice potatoes 1/8" thick on diagonal or lengthwise, wash and dry well.

  4. Begin to layer in 13x9 stoneware dish: potatoes (like shingles), eggplant, zucchini, cheese mixture and begin again with potatoes for second layer.

  5. Top with remaining sauce and mozzarella cheese.

  6. Microwave on high for 30 minutes then bake in oven at 350 degrees for 20 minutes or until brown.

  7. Let rest for 15 minutes, slice into 8 pieces and serve!
