Recipe Ingredients for Vegetable Lasagna

1 cup, cubes Eggplant
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped Peppers, Sweet, Green
1 oz Onions
1/3 cup Bread Crumbs

Recipe Directions for Vegetable Lasagna

  1. Wash, peel and slice zucchini and eggplant.Slice onion, red and green peppers.

  2. Place eggplant on bottom of tray and then lay zuchini, onions, red and green pepper as if making a lasgna. Drizzle olive oil and sprinkle bread crumbs on top.

  3. Bake at 375 for 25 mins
