Easy veggie lasagna. Uses 7 lasagna noodles and a full jar of pasta sauce.

Recipe Ingredients for Vegetable Lasagna

132 1/2 grams Oven-Ready Lasagna Noodles
2 cups broccoli florets
2 cups cauliflower florets
1 onion, chopped
1 red pepper, chopped
2 cups mushrooms, sliced
2 cups spinach, chopped
2 4/5 cups Garden Select Pasta Sauce
500 ml cottage cheese
380 grams mozzarella cheese, shredded
1/4 cup parmesan

Recipe Directions for Vegetable Lasagna

  1. Spray large frying pan with cooking spray.

  2. Cook broccoli & cauliflower until they start to get tender.

  3. Add onion, red pepper and mushrooms to the frying pan, book until they start to get tender.

  4. Add the spinach to the frying pan. Cook all until soft.

  5. Spray an 8" x 12" baking pan with cooking spray, add just enough pasta sauce to coat the bottom.

  6. Stir remaining pasta sauce into veggies. Simmer together until heated through.

  7. Mix cottage cheese and mozzarella together in a bowl, reserving some mozarella to sprinkle on top.

  8. Arrange 3 and a half lasagna noodles in the pan so most of the surface is covered.

  9. Pour half of sauce mixture evenly on top of the noodles.

  10. Pour half of the cheese mixture evenly on top of the sauce.

  11. Arrange 3 and half noodles in the pan so most of the surface is covered, putting the half noodle on the other end of the pan from the first layer.

  12. Pour half of sauce mixture evenly on top of the noodles.

  13. Pour half of the cheese mixture evenly on top of the sauce.

  14. Sprinkle remaining mozarella on top.

  15. Sprinkle parmesan on top.

  16. Cover and bake for 45 minutes at 350 degrees.

  17. Let sit for 15 minutes before cutting.
