Recipe Ingredients for Vegetable Lasagna

2 cups uncooked chicken breast
1 cup ricotta cheese
1 cup mozzarella cheese
1 cup tomato puree
2 tsp ground fennel
2 tsp Crushed Garlic
2 tsp oregano
1 tsp salt
1 cup zucchini
1 cup mushrooms
2 eggs
1 cup spinach

Recipe Directions for Vegetable Lasagna

  1. Chop chicken breast into 1 inch cubes

  2. combine puree with seasonings and garlic

  3. Place 2 Tbsp of puree mixture in the bottom of a 6x9 inch baking dish (no need to grease the dish)

  4. place chicken on top of puree

  5. cut zucchini (baby marrow) lengthwise and lay across chicken

  6. Mix ricotta with 2 eggs, pour over zucchini

  7. leave spinach leaves whole, lay over ricotta, then mushrooms, then mozzarella.

  8. Bake covered with foil for 45 mn. Uncover and bake a further 15 mn.
