This fills up a casserole dish, and you can believe it's designed for large, filling portion sizes. You could also serve this as 6-8 portions with a side salad, light garlic bread, and light dessert.

Recipe Ingredients for Vegetable lasagna

12 oz pasta
2 cups zucchini
8 oz mushrooms
24 oz cottage cheese
1 tsp garlic salt
20 oz tomato sauce
8 oz lean ground beef
1 cup mozzarella

Recipe Directions for Vegetable lasagna

  1. Start pasta of your choice boiling.

  2. Layer raw sliced zucchini in 9x13 casserole dish, followed by raw sliced mushrooms.

  3. Put the cottage cheese in a blender, adding garlic salt to taste (about 1 tsp) and you'll have a wonderful ricotta-like paste, spread this on top of the mushrooms for your next layer.

  4. Now drain your pasta and put that layer on.

  5. Next layer your cooked, seasoned ground beef.

  6. Now dump on a can of Hunt's Spaghetti sauce - mushroom, garden vegetable, or traditional.

  7. Finally layer on your shredded mozzarella.

  8. Put in the oven at 375 for 1/2 an hour or until the cheese begins to look toasty and brownish in spots.

  9. Let stand a few minutes before serving - it's really hot!
