5 points on Weight Watcher plan 9 inch square pan, 375 degrees for 45 minutes Look for 2% milk mozarella Lowfat ricotta, low sugar (4 gms sugar) organic pasta sauce

Recipe Ingredients for Vegetable Lasagna

2 T. olive oil
15 oz. ricotta cheese
8 oz. reduced fat mozzarella cheese
1 egg
18 oz. organic tomato sauce
1 small zuchini
1 onion
8 oz. mushrooms
1 cup sliced green pepper
10 oz. chopped spinach
6 oz. whole wheat lasagna noodles

Recipe Directions for Vegetable Lasagna

  1. Saute chopped and sliced vegetables in 2 T. olive oil.

  2. Spray 9" square baking dish with non-stick spray

  3. Cook spinach in microwave and squeeze dry. Stir into ricotta. Beat in 1 egg.

  4. Alternate layers of 2 noodles, pasta sauce, mozarella, ricotta mixture. Top with pasta sauce and a little mozarella.
