This is the classic Better Homes and Gardens lasagna recipe made with vegetables instead of sausage or ground beef. Very filling, less calories and fat.

Recipe Ingredients for Vegetable Lasagna

2 cups sliced zucchini
1 cup sliced red pepper
1 cup sliced green pepper
14 ounces sliced mushrooms
1/8 cup diced onion
1 tsp olive oil
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon black pepper
1/4 teaspoon garlic powder
14 1/2 ounce canned tomatoes
6 ounce tomato paste
8 ounce tomato sauce no salt added
8 ounce lasagna noodle
1 egg
1 egg white
2 cups fat free cottage cheese
1 tablespoon dried parsley
1/2 cup grated parmesan cheese
1/2 pound shredded part skim mozzarella

Recipe Directions for Vegetable Lasagna

  1. Using 1 tsp olive oil or cooking spray. Sautee the first five ingredients.

  2. Add tomatoes, tomato paste, tomato sauce and spices. Simmer for about 15 minutes.

  3. Cook lasagna noodles according to package directions (about 10 minutes), Drain noodles

  4. Combine eggs, cottage cheese, parsley and 1/3 cup of parmesan cheese.

  5. Layer half (3)the noodles in a 13x9x2 baking dish. Spread with half of the cottage cheese filling. Add half of the mozzarella cheese and half the vegetable sauce. Repeat layers. top with last 2 noodles. Sprinkle remaining Parmesan atop.

  6. Bake at 375' for 30 to 35 minutes or til heated through. (Or assemble early and refrigerate; bake 45 minutes or till hot). Let stand for 10 minutes. Makes 9 servings.
