Recipe Ingredients for Vegetable Lasagna

12 ounces spaghetti sauce
1 1/2 pounds lasagna noodles
5 medium carrots
2 stalks broccoli
1 head cauliflower
1 1/2 pounds mozzarella cheese
1 pound cottage cheese
1 tablespoon oregano
1 tablespoon basil
1 tablespoon black pepper

Recipe Directions for Vegetable Lasagna

  1. Cook the lasagna noodles until just slightly firm. Rinse in cold water to remove starch.

  2. Dice vegetables and mix with spices.

  3. Layer ingredients in large baking pan.

  4. Bake at 375 for an hour to an hour and a half, or until cheese is bubbly and browned.
