Recipe Ingredients for Vegetable Lasagna

2 medium carrots, peeled and shredded
2 medium potatoes, peeled and shredded
2 1/2 cups summer squash,peeled and chopped
1 medium onion, shredded
4 large tomatoes, chopped
2 tbs chopped garlic
16 oz ricotta cheese,
8 oz low fat cottage cheese
8 oz mozzarella cheese, low fat, cubed
1/4 cup oregano
1 salt
1 pepper
1 tbs garlic
4 oz lasagna noodles, no boil

Recipe Directions for Vegetable Lasagna

  1. peel carrots, potato, onion then shredd

  2. peel squash, cube

  3. tomato, chop in cubes..cook down until soft

  4. drain extra fluids

  5. add chopped garlic to tomatoes,

  6. salt pepper and oregano

  7. mix together carrots, potato, onion, squash, ricotta, cottage cheese, oregano, salt, pepper, garlic

  8. layer bottom of pan with tomatoes

  9. 2 noodles

  10. mixture

  11. 1/2 of the mozz cheese

  12. finish to top the same pattern

  13. add the rest of the mozz cheese to top

  14. bake 1 hr 10 min @ 350 or until done
