whole wheat pasta, lowfat cheese, added vegetables

Recipe Ingredients for Vegetable Lasagna

12 ounces Barilla Plus Rotini, cooked
8 ounces mozarella cheese, part skim
6 ounces parmasan cheese
12 ounces low fat cottage cheese
1/2 egg
2 carrots
1 yellow squash
8 mushrooms
1 small onion
2 cloves garlic
12 ounces spinach
24 ounces marinara sauce

Recipe Directions for Vegetable Lasagna

  1. saute vegetables, add marinara sauce

  2. defrost spinach, press excess water out

  3. mix cottage cheese, egg, 2-3oz parm cheese

  4. boil rotini, drain with cold water

  5. grate mozarella and rest of parm cheese

  6. line pan with plain tomato sauce

  7. layer as follows:

  8. pasta

  9. cottage cheese mixture

  10. spinach

  11. marinara, vegetable mixture

  12. grated cheese (light until top)

  13. bake at 350 for an hour, cover until last 15 minutes
