Slimmed down version of a classic

Recipe Ingredients for Vegetable Lasagna

2 tablespoons extra-virgin olive oil
1 medium Spanish onion, finely chopped
1 medium carrot, finely chopped
1 medium zucchini, finely chopped
1 medium yellow squash, finely chopped
8 asparagus spears, cut into 1/4-inch slices
2/3 lb. lasagna
3 cups tomato sauce
1 1/2 cups canned white beans, rinsed and drained
20 ounce frozen chopped spinach, thawed and squeezed dry
2 cups shredded mozzarella, part skim
1/2 cup freshly grated Parmesan

Recipe Directions for Vegetable Lasagna

  1. Directions

  2. Preheat oven to 375 degrees F.

  3. In a saute pan over medium heat, add extra-virgin olive oil.

  4. When almost smoking, add the onion and cook until soft, about 5 minutes.

  5. Add the carrot and cook for 3 minutes.

  6. Add the zucchini and squash cook for 5 minutes.

  7. Add asparagus and cook for 2 minutes.

  8. Remove from heat when all vegetables are completely cooked but still have a good crunch.

  9. Allow to cool.

  10. Coat the bottom of dish with a few tablespoons of tomato sauce.

  11. Place pasta on the bottom of dish.

  12. Rinse the beans with water and season with salt and pepper.

  13. Layer beans and spinach evenly over pasta.

  14. Layer 1/3 of cheese over the spinach

  15. Spread 1 cup of sauce on top.

  16. Place a second layer of pasta on top and gently press down.

  17. Place sauteed vegetables evenly over pasta.

  18. Layer 1/3 of cheese over the vegetables

  19. Top with 1 cup tomato sauce

  20. Place the third layer of pasta.

  21. Sprinkle top with the mozzarella and Parmesan cheeses.

  22. Top with 1 cup tomato sauce

  23. Cover pan with aluminum foil

  24. Bake in oven for 20 minutes or until bubbling.

  25. Remove foil - bake an additional 5-10 minutes.
