Recipe Ingredients for vegetable lasagna

8 oz dried lasagna noodles
2 eggs
2 cups fat free cottage cheese
15 oz fat free ricotta cheese
2 tsp. italian seasoning
2 cups sliced mushrooms
1 cup chopped onion
4 cloves garlic
2 tbsp olive oil
2 tbsp flour
1/2 tsp pepper
2 cups skim milk
5 oz spinach
5 oz broccoli
1 cup carrots
5 oz summer squash
3/4 cup parmesan cheese
8 oz fat free mozzarella cheese

Recipe Directions for vegetable lasagna

  1. In a bowl combine eggs, ricatta cheese, cottage cheese, and italian seasoning. Set aside.

  2. In a skillet cook mushrooms, onion, and galic in hot oil. Stir in flour and pepper add milk all at once. Cook and stir until thickened and bubbly. Remove from heat. Stir in vegetables and 1/2 cup parm. cheese.

  3. Assemble in 3 quart rectangular baking dish. Put one layer of vegetables on the greased baking dish, layer on noodles, cheese, vegetables, and sprinkle mozzerella cheese. Repeat 2 more times. Sprinkle the top layer with remaining 1/4 cup parm. cheese.

  4. Bake uncovered in 350 degree oven for 35 minutes or until heated through. let sit 10 min before serving.
